In the late 1980's, the Twomey family produced a traditional sausage using 100% Irish ingredients, and their butchery knowledge. This sausage, similar to Clonakilty blackpudding, was sold in the butcher shop first, before it was decided to package and sell them in shops all over Ireland as demand dictated!
The sausages were sold under the name of Clonakilty "Ispíní", and today they are known and loved all over Ireland. Our sausages are made with the same passion for quality, taste and tradition as our famous blackpudding. We believe that our sausages are an authentic traditional Irish pork sausage, and that they are a testament to the years perfecting our craft in the butcher shop in Clonakilty, West Cork.
In 2007, due to customer requests, we created the Clonakilty Gluten-Free sausage, the recipe is simply a gluten-free version of the Clonakilty Ispíní, so they can be enjoyed by everyone, even those not on restricted diets!
We think our sausages are best shallow fried but can be grilled or oven baked, until fully cooked with a golden brown exterior. Clonakilty "Ispíní" have a firm bite with a meaty succulent taste.
