Clonakilty Blackpudding and blue cheese tartlets

This is another one of our finger food favourites and when it comes to these moreish snacks, sharing is definitely easier said than done. The Clonakilty Blackpudding and blue cheese tartlets go particularly well with a good onion jam. Good things really do come in small packages!

Ingredients

1 packet of mini savoury pastry tartlets or mini vol au vent cases

280g of Clonakilty Blackpudding

100g of your favourite blue cheese

Parsley to garnish

 

Method

1. Cut the Blackpudding into slices and fry for a few minutes on each side.

2. Mash the blue cheese in with the pudding to make a lovely, crumbly mixture and simply spoon this straight into your pastry cups.

3. Garnish with a little leaf of parsley & serve hot.
