Ingredients

75g Clonakilty Blackpudding

50g cured rashers

30g cherry tomatoes

15g sliced cucumber

10g sliced red onion

50g oriental mixed baby leaf

20g balsamic vinegar

20g olive oil

Method

  1. Cut the rashers into thin strips. Fry the rashers and blackpudding in oil until crispy.
  2. Mix the cherry tomatoes, cucumber, red onion, mixed baby leaf, balsamic vinegar and olive oil together in a large bowl.
  3. Add the blackpudding and the rashers, stirring all ingredients well. Serve while hot.
