Clonakilty Blackpudding Crumpets

Ingredients

4 apples, peeled and sliced
4 tbsp of maple syrup
300g crème fraiche
Pinch of sea salt and ground black pepper
Half bunch of chives, chopped
1 x Clonakilty Blackpudding, cut into 6 x 1-inch pieces
1 tsp oil
6 crumpets, toasted

Method

1. In a medium size pan over medium heat cook the apples and maple syrup,
stirring occasionally, for 5 minutes until the apples are nice and soft but not
breaking down and the maple syrup has reduced. Set aside.
2. Mix the crème fraiche with half the chives and salt and pepper.
3. Cook the Clonakilty Blackpudding slices in a medium pan with oil over
medium heat, when hot add the pudding and cook for 4-5 minutes per side
until crispy and cooked through.
4. Divide and spread the crème fraiche over the crumpets. To assemble top
each crumpet with a slice of pudding and 2-3 pieces apples and a sprinkle of
chives
