Clonakilty Blackpudding with Poached eggs on toast

The perfect go-to brunch dish. Avocado toast with poached eggs is good but topped with Clonakilty Blackpudding? You’re onto a winner.


1-2 eggs, very fresh eggs required for poaching

1/2 avocado

1x1cm slice Clonakilty Blackpudding

2 thick slices of toast 

10g butter

100g baby kale

1 tsp lemon juice

Salt and pepper


  1. Fry the black pudding for two minutes each side, then set aside to cool before crumbling.
  2. Poach the eggs for three minutes then remove with then remove with a slotted spoon.
  3. Melt the butter in a small pan to wilt the kale, add a little lemon juice and season.
  4. To serve, spread the avocado over one piece of toast, lay baby kale alongside and top with poached eggs a little chilli flakes and sprinkle with the black pudding crumb.
