Clonakilty Blackpudding with Poached eggs on toast

The perfect go-to brunch dish. Avocado toast with poached eggs is good but topped with Clonakilty Blackpudding? You’re onto a winner.
1-2 eggs, very fresh eggs required for poaching
1x1cm slice Clonakilty Blackpudding
2 thick slices of toast
100g baby kale
1 tsp lemon juice
Salt and pepper
- Fry the black pudding for two minutes each side, then set aside to cool before crumbling.
- Poach the eggs for three minutes then remove with then remove with a slotted spoon.
- Melt the butter in a small pan to wilt the kale, add a little lemon juice and season.
- To serve, spread the avocado over one piece of toast, lay baby kale alongside and top with poached eggs a little chilli flakes and sprinkle with the black pudding crumb.
