Clonakilty Veggie Pudding Taco’s

Try out these tasty tacos for your next Mexican inspired feast! These Clonakilty Veggie Pudding Tacos are full of flavour and are fun to make. Make them your own and add you’re favourite toppings or a little extra spice if you can handle the heat.


1 pack of small tortillas

200g Clonakilty Veggie Pudding

10 mushrooms

1 onion

1/2 tsp paprika

1/4 tsp cumin

Grated cheese (optional)

Sea salt and pepper

For the salsa:

1 onion

3 tomatoes

Handful parsley

Juice of one lemon

1 tablespoon of vinegar

Sea salt

(If you like it spicy you can chop up one or two green chillies)


2 avocados

2 garlic cloves diced

Juice of 1/2 lime

Sea salt to taste


1. Sauté one onion and about 10 mushrooms finely chopped with a drop of olive oil until onion is translucent.
2. Add 1/4 teaspoon of cumin, 1/2 teaspoons of paprika, sea salt and black pepper.
3. Crumble in your Clonakilty Veggie pudding breaking it down as you cook it.
4. Optional: you can add some parsley or Coriander.
5. Heat up your tortillas this will help your tortillas to be nice and soft and avoid breaking.
6. Fill them up, add salsa and guacamole and enjoy.
TIP: add cheese and bring back to the heat to melt and enjoy!
